四月,加拿大東郊仍然下著雪。
我和農夫一家在田間忙了一個早上之後回到農舍,農婦奉上香茶後便去做午飯,不到一句鐘便捧著一鍋熱騰騰的螺絲粉出來,還有羅馬生菜沙律和紅酒。
農婦說她娘家是意大利西西里人,鄉間生活簡樸,田裡有甚麼便吃甚麼。
我說西西里是教父 Vito Corleone 的老家,就叫這鍋香噴噴的螺絲粉做教父螺絲粉啦,逗得一家人哈哈大笑。
教父螺絲粉 Fusilli Corleone
茄子和番茄等量,任何意粉都可以,多少隨意。
煮一鍋水,水開後放入意粉,邊煮邊搞。
茄子和番茄切大粒,先放茄子落鍋,乾燒一會,放番茄落鍋,加油快炒。
把剛煮好的意粉湯倒出來,把意粉倒入餸中,炒勻即成,原鍋上枱。

中菜很少會把茄子和番茄一起煮,想不到味道如此鮮甜;吃意粉的時候加點羊奶芝士和新鮮香草,好味之極,施姐姐不妨一試。09Dj.WD
It is still snowy in the east countryside of Canada this April.
I worked with the farmer and his family members in the field busily all morning.  Then, we went back to the barn.  After the farm lady served us some tea with lovely scent, she went to prepare meal for us.  Within an hour, she came with a big pot of hot Fusilli, Cesar Salad and red wine.
The farm lady said she came from Sicilia, life was simple back home and they ate whatever grew in the field.
I told her since Godfather Vito Corleone came from Sicilia, let’s name this delicious pot of Fusilli “
Fusilli Corleone ”.  All found this a good joke and laughed joyfully. 
Fusilli Corleone
Equal amount of Egg Plant and Tomato with desirable amount of any kind of spaghetti you like.
Boil a pot of water.  Put spaghetti in the boiling water and stir them while boiling.
Cut egg plant and tomato into big dices.  Pour egg plant in the wok to dry fry a while, then add in tomato and oil.  Stir-fry.
Pour the spaghetti soup into a bowl.  Mix spaghetti with egg plant and tomato in the wok, stir-fry a little and served in the original wok. 
It is rare to find egg plant and tomato cooked together in Chinese dishes, but the taste is superb. 
Add in a little bit of Goat Cheese and fresh herbs take the dish to the next level.

5 分鐘茄子(兩位)
茄子300(半斤)、豆卜40克(1兩)、雜菌少許、油少許、滾水1/4杯。
茄子對開切角,雜菌切碎,豆卜對角切開。
大火燒鑊,下少許油,隨即加入所有材料,蓋好,聞到茄子香味時,加滾水兜勻,蓋好煮20-30秒便可上碟。08Io.WD
5-minute Egg Plant dish (for two)
Egg Plant 300g, Tofu Puff one teal, a fair amount of Assorted Mushroom, a little bit of oil, boiling water 1/4 cup
Cut egg plant and tofu puff in halves, assorted mushroom into dices.
Heat wok with maximum heat, then pour in a little bit of oil.  Put all ingredients in the wok and cover it with wok cover.  When you smell the scent of egg plant, add in boiling water and mix well.  Cook for another 20 to 30 seconds and dish

魚香茄子
茄子600(1斤)、豆卜40克(1兩)、蔥40克(1兩)、薑40克(1兩)、熱過濾水1/2杯。
茄子去蒂洗淨,對開切段,蔥切蔥花,薑切末、豆卜對開切絲。起油鍋,爆香薑蔥,放茄子入鑊,快炒;放豆卜入鑊,加熱水,蓋上一小會,加調味,炒勻,撒上少許蔥花便可上碟。07Gt.九龍城鍾伯提供

WD,我用了150克施姐姐的煲呔粉,一個茄子和兩個大番茄(共550克)做了三人份量,加了巴西果仁碎和車打芝士,效果很好,請問您用的是那種羊奶芝士和香草?用那種油?
